Oatmeal Cranberry Bars
1-16 oz. can of whole berry cranberry sauce*
2 Tbsp. cornstarch
1 3/4 cup quick rolled oats
3/4 cup flour
3/4 cup packed light brown sugar
1/2 tsp. baking soda
1/2 tsp. salt
1/3 cup butter or margarine
3 -4 Tbsp. milk
Cook the cranberry sauce and cornstarch over medium heat, stirring constantly, until thick and bubbly, about 3 to 5 minutes. Cool. Heat oven to 375 degrees. Grease a 13 x 9 " baking pan. In a large bowl combine the oats, flour, brown sugar, baking soda, and salt. Cut in the butter until mixture is coarse crumb. Set aside about 3/4 to 1 cup of crumb mixture for the topping. To the rest, add enough milk to moisten. Press into the bottom of the pan, top with the cranberry mixture then add the remaining crumbs on the top. Bake about 30 minutes or until golden brown. Cool and cut into bars.
*I do believe that you could substitute cooked rhubarb for the cranberry sauce also.
